Recipe of the Week: Hearty Lentil & Vegetable Stew

Let’s try a Hearty Lentil & Vegetable Stew! This cozy, protein-packed stew is loaded with veggies, fiber, and warming spices. It’s filling, delicious, and perfect for winter meals, whether as a main dish or alongside some crusty bread.



INGREDIENTS

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup dried green or brown lentils, rinsed
  • 1 large sweet potato, peeled and cubed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth (or more for a thinner stew)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp turmeric
  • Salt and pepper, to taste
  • 2 cups chopped kale or spinach
  • Fresh parsley or cilantro, for garnish

    INSTRUCTIONS

  • 1. Sauté Veggies: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until they begin to soften, about 5-7 minutes. Add garlic and cook for another minute.
  • 2. Add Spices and Lentils: Stir in the cumin, smoked paprika, turmeric, salt, and pepper, coating the veggies with the spices. Add the lentils, sweet potatoes, diced tomatoes, and vegetable broth.
  • 3. Simmer: Bring to a boil, then reduce the heat to low, cover, and let simmer for 30-35 minutes, or until the lentils and sweet potatoes are tender. Stir occasionally, adding more broth if needed.
  • 4. Add Greens: Once the stew is cooked, stir in the chopped kale or spinach, letting it wilt for about 3-5 minutes.
  • 5. Serve: Ladle the stew into bowls, garnish with fresh parsley or cilantro, and serve warm.
