INGREDIENTS
1 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 cup dried green or brown lentils, rinsed
1 large sweet potato, peeled and cubed
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth (or more for a thinner stew)
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp turmeric
Salt and pepper, to taste
2 cups chopped kale or spinach
Fresh parsley or cilantro, for garnish
INSTRUCTIONS
1. Sauté Veggies: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until they begin to soften, about 5-7 minutes. Add garlic and cook for another minute.
