Recipe of the Week: Apple Cinnamon Baked Oatmeal

It’s a warm, hearty, and nutritious winter breakfast that tastes like apple pie. Perfect for cozy mornings, and it’s easy to make ahead and reheat throughout the week!



INGREDIENTS

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups almond milk (or milk of choice)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 apples, diced (Honeycrisp or Granny Smith work well)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Optional toppings: Greek yogurt, additional nuts, or a drizzle of maple syrup

    INSTRUCTIONS

  • 1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  • 2. Mix Dry Ingredients: In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
  • 3. Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, egg, and vanilla extract until smooth.
  • 4. Combine and Add Apples: Pour the wet ingredients into the dry ingredients and stir to combine. Fold in the diced apples and nuts, if using.
  • 5. Bake: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
  • 6. Serve: Serve warm, topped with Greek yogurt, extra nuts, or a drizzle of maple syrup if desired.
