Recipe of the Week: Cranberry Pistachio Energy Bites

Here’s a fun and festive holiday recipe for Cranberry-Pistachio Energy Bites! These little treats are packed with flavor, a touch of sweetness, and nutritious ingredients. Plus, they’re super easy to make and perfect for snacking or gifting!


INGREDIENTS


  • 1 cup rolled oats
  • 1/2 cup almond or cashew butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup dried cranberries (unsweetened if possible)
  • 1/2 cup chopped pistachios
  • 1/4 cup mini dark chocolate chips (optional)
  • 1/2 tsp vanilla extract
  • A pinch of salt

INSTRUCTIONS

  • 1. Mix: In a large bowl, combine oats, nut butter, honey, cranberries, pistachios, vanilla extract, and salt. If you’re using chocolate chips, toss them in too!
  • 2. Form Bites: Once everything is mixed well, use your hands or a small scoop to roll the mixture into 1-inch balls. If the mixture is too sticky, chill it in the fridge for 10-15 minutes to make it easier to handle.
  • 3. Chill: Place the bites on a tray lined with parchment paper and refrigerate for about 30 minutes until firm.
  • 4. Store: Keep them in an airtight container in the fridge for up to a week (if they last that long!)
