INGREDIENTS
- 1/2 cup canned pumpkin puree (unsweetened)
- 2 tbsp chia seeds
- 3/4 cup almond milk (or any milk of choice)
- 1-2 tbsp maple syrup (to taste)
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- Optional toppings: chopped nuts, coconut whipped cream, or a sprinkle of cinnamon
DIRECTIONS
- In a medium bowl, whisk together the pumpkin puree, almond milk, maple syrup, vanilla, and spices until well combined.
- Stir in the chia seeds.
- Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken.
- Before serving, stir again and top with your favorite healthy toppings like nuts or a dollop of whipped coconut cream.
