INGREDIENTS

  • 1/2 cup canned pumpkin puree (unsweetened)
  • 2 tbsp chia seeds
  • 3/4 cup almond milk (or any milk of choice)
  • 1-2 tbsp maple syrup (to taste)
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Optional toppings: chopped nuts, coconut whipped cream, or a sprinkle of cinnamon

DIRECTIONS

  1. In a medium bowl, whisk together the pumpkin puree, almond milk, maple syrup, vanilla, and spices until well combined.
  2. Stir in the chia seeds.
  3. Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping.
  4. Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken.
  5. Before serving, stir again and top with your favorite healthy toppings like nuts or a dollop of whipped coconut cream.
