Sweet Potato & Lentil Stew 🍠🥘

INGREDIENTS

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • Salt and pepper, to taste
  • 2 cups kale or spinach, chopped
  • Juice of 1/2 lemon

INSTRUCTIONS

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened and fragrant (about 3 minutes).
  2. Add sweet potatoes and spices: Stir in the sweet potatoes, cumin, smoked paprika, turmeric, and cinnamon. Cook for 2-3 minutes to toast the spices.
  3. Simmer the stew: Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and simmer uncovered for 20-25 minutes, stirring occasionally, until the lentils and sweet potatoes are tender.
  4. Add the greens: Stir in the kale or spinach and cook for 2-3 minutes, until wilted.
  5. Finish with lemon juice: Add a squeeze of lemon juice for brightness, and adjust seasoning with salt and pepper to taste.
