The Ultimate Loaded Veggie & Cheese Melt 🥪🧀

INGREDIENTS
- 4 slices of sourdough or ciabatta bread
- 4 tablespoons butter (softened)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup crumbled feta (optional)
- 1/2 cup sautéed mushrooms
- 1/4 cup caramelized onions
- 1/2 avocado, sliced
- 1/4 cup roasted red peppers, sliced
- 1/2 cup fresh spinach leaves
- 1 teaspoon Dijon mustard
- 1 teaspoon mayonnaise
- Pinch of garlic powder
- Salt and pepper to taste
INSTRUCTIONS
- Prepare the Bread: Butter one side of each bread slice generously. This will help create that golden, crispy crust.
- Mix the Spread: In a small bowl, combine the Dijon mustard, mayonnaise, and garlic powder. Spread this on the unbuttered side of two bread slices.
- Layer the Fillings: On the spread side, start layering your sandwich: fresh spinach, roasted red peppers, avocado slices, sautéed mushrooms, caramelized onions, and the mixed cheeses.
- Top It Off: Place the other slices of bread (butter side out) on top of the fillings.
- Grill the Sandwich: Heat a non-stick skillet or griddle over medium heat. Carefully place the sandwiches in the pan and grill for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
- Slice and Serve:Â Let the sandwich cool slightly, then slice it in half and serve with a side of chips, pickles, or a crisp salad.
