Creamy Cauliflower and White Bean Soup 🥘
INGREDIENTS
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 medium head of cauliflower, chopped into florets
- 1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed
- 4 cups vegetable broth
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 1/4 tsp smoked paprika (optional)
- Salt and pepper, to taste

INSTRUCTIONS
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened (about 3-4 minutes).
