This velvety soup is a comforting and healthy winter staple. Packed with fiber, protein, and loads of flavor, it’s perfect for warming up on a chilly evening!

Creamy Cauliflower and White Bean Soup 🥘

INGREDIENTS

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 medium head of cauliflower, chopped into florets
  • 1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1/4 tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • Optional toppings: croutons, chopped parsley, or a drizzle of olive oil

INSTRUCTIONS

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened (about 3-4 minutes).
  2. Add cauliflower and spices: Toss in the cauliflower florets, thyme, and smoked paprika (if using). Cook for another 2-3 minutes, stirring occasionally.
  3. Simmer the soup: Add the white beans and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, until the cauliflower is tender.
  4. Blend until creamy: Using an immersion blender (or a regular blender in batches), puree the soup until smooth and creamy. Stir in the almond milk and season with salt and pepper to taste.
  5. Serve: Ladle the soup into bowls and garnish with your favorite toppings like croutons, parsley, or an extra drizzle of olive oil.

Serving Suggestions

  • Pair with a slice of crusty whole-grain bread for a complete meal.
  • Add a sprinkle of shredded cheese or a dollop of Greek yogurt for extra richness.

This soup is a light yet satisfying way to stay cozy while enjoying a nutrient-packed meal. Enjoy!
