A fun and flavorful fall recipe using chicken sausage is Chicken Sausage, Apple, and Butternut Squash Skillet. This dish combines savory chicken sausage with sweet apples and hearty butternut squash, making it a perfect, cozy meal for fall.
INGREDIENTS
- 4 chicken sausages (sliced into rounds)
- 1 medium butternut squash (peeled, seeded, and cubed)
- 1 apple (Honeycrisp or Gala, chopped)
- 1 small onion (chopped)
- 2 tbsp olive oil
- 1 tbsp fresh rosemary (chopped) or 1 tsp dried rosemary
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Optional: a drizzle of maple syrup for extra sweetness
DIRECTIONS
- Prepare the squash: Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with 1 tablespoon of olive oil, rosemary, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and lightly caramelized.
- Cook the sausage: While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 5-7 minutes until browned on both sides. Remove from the skillet and set aside.
- Sauté the apple and onion: In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Then, add the chopped apple and cook for another 3-4 minutes, until the apples start to soften.
- Combine everything: Add the roasted butternut squash and cooked chicken sausage back into the skillet. Stir to combine, and cook for another 2-3 minutes to let the flavors meld together.
- Optional: Drizzle a bit of maple syrup over the top for a hint of sweetness, then serve warm.
