Recipe of the Week: Roasted Brussels Sprouts with Apples and Pecans
A great, healthier Thanksgiving side dish I recommend is Roasted Brussels Sprouts with Apples and Pecans. It’s packed with fall flavors, nutritious, and adds a delicious balance to heavier dishes!

INGREDIENTS

  • 1 lb brussels sprouts, trimmed and halved
  • 1 apple (Honeycrisp or Gala), cored and chopped
  • 1/2 cup pecans, roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Optional: a drizzle of maple syrup for sweetness

DIRECTIONS

  1. Preheat the oven to 400°F (200°C).
  2. Toss the Brussels sprouts with olive oil, salt, and pepper, then spread them out on a baking sheet.
  3. Roast for 15-20 minutes, stirring halfway through, until they start to brown.
  4. Add the chopped apple and pecans, then roast for another 10 minutes, until the apples are tender and the pecans are toasted.
  5. Remove from the oven, drizzle with balsamic vinegar (and maple syrup if desired), and toss to coat.
This dish offers a satisfying mix of savory, sweet, and nutty flavors, while being nutrient-dense and low in calories!
