A great, healthier Thanksgiving side dish I recommend is Roasted Brussels Sprouts with Apples and Pecans. It’s packed with fall flavors, nutritious, and adds a delicious balance to heavier dishes!
INGREDIENTS
- 1 lb brussels sprouts, trimmed and halved
- 1 apple (Honeycrisp or Gala), cored and chopped
- 1/2 cup pecans, roughly chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Optional: a drizzle of maple syrup for sweetness
DIRECTIONS
- Preheat the oven to 400°F (200°C).
- Toss the Brussels sprouts with olive oil, salt, and pepper, then spread them out on a baking sheet.
- Roast for 15-20 minutes, stirring halfway through, until they start to brown.
- Add the chopped apple and pecans, then roast for another 10 minutes, until the apples are tender and the pecans are toasted.
- Remove from the oven, drizzle with balsamic vinegar (and maple syrup if desired), and toss to coat.
This dish offers a satisfying mix of savory, sweet, and nutty flavors, while being nutrient-dense and low in calories!
