INGREDIENTS

  • 2 medium sweet potatoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small zucchini, diced
  • 1 cup fresh spinach, roughly chopped
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil or avocado oil
  • 4 eggs (optional, for topping)
  • Fresh parsley or cilantro for garnish

INSTRUCTIONS

  1. Prepare the Ingredients: Wash and dice all your veggies into bite-sized pieces for even cooking.
  2. Cook the Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sweet potatoes and cook for 5–7 minutes, stirring occasionally, until they start to soften.
  3. Add the Vegetables: Add the remaining tablespoon of olive oil, red onion, bell peppers, and zucchini to the skillet. Cook for another 5 minutes, stirring occasionally.
  4. Season the Hash: Stir in the garlic, smoked paprika, cumin, salt, and pepper. Cook for another 2–3 minutes until everything is fragrant and the veggies are tender.
  5. Add the Spinach: Toss in the chopped spinach and cook for 1–2 minutes until wilted.
  6. Optional: Add Eggs: Make 4 small wells in the hash and crack an egg into each. Cover the skillet and cook on low heat for 3–4 minutes or until the eggs are cooked to your liking.
  7. Serve: Garnish with fresh parsley or cilantro and serve warm. Pair it with avocado slices or toast for extra goodness!
