Spiced Apple and Quinoa Breakfast Bowl 🍎🥣
INGREDIENTS
- 1/2 cup quinoa, rinsed
- 1 cup unsweetened almond milk (or milk of choice)
- 1 medium apple, diced
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp maple syrup or honey (optional, for sweetness)
- 1/4 cup chopped walnuts or pecans
- 1 tbsp chia seeds or flaxseeds
- Optional toppings: Greek yogurt, a drizzle of almond butter, or dried cranberries
INSTRUCTIONS
- Cook the quinoa: In a medium saucepan, combine quinoa, almond milk, and a pinch of salt. Bring to a boil, then reduce heat to low and cover. Simmer for 12-15 minutes, or until the quinoa is tender and the milk is absorbed.
- Sauté the apple: While the quinoa is cooking, heat a small skillet over medium heat. Add the diced apple, cinnamon, and nutmeg. Cook for 3-5 minutes, stirring frequently, until the apple is softened and fragrant.
- Combine: Stir the sautéed apples and maple syrup (if using) into the cooked quinoa. Mix well.
- Assemble the bowl: Spoon the apple-quinoa mixture into a bowl. Top with walnuts, chia seeds, and any other desired toppings like yogurt or almond butter.
Serving Suggestions
- Serve warm for a cozy start to your day.
- Make extra and store in the fridge for up to 3 days—just reheat with a splash of milk before serving.
