- 2 medium carrots, sliced
- 1 sweet potato, peeled and cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup dried apricots, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/4 tsp cinnamon
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- Juice of 1/2 lemon
- 1/4 cup fresh cilantro or parsley, chopped
INSTRUCTIONS
- Sauté the aromatics: Heat olive oil in a large pot or tagine over medium heat. Add onion and garlic, cooking until fragrant and softened (about 3 minutes).
- Add spices and vegetables: Stir in cumin, coriander, smoked paprika, cinnamon, and cayenne. Add the carrots and sweet potatoes, cooking for 2-3 minutes to coat them in the spices.

- Garnish and serve: Sprinkle with fresh cilantro or parsley before serving.
